Sharp

After the blade is established, I sharpen the knife by hand on Japanese water stones of 8000 grit and higher. This is the only process that yields the sharpness that I desire for my knives. After sharpening, I finish the blade with either a mirror or Kasumi (hazy, semi-mirror) finish.
